Wash and cut the Chinese cabbage and put it in a bowl.
Add salt and rub to mix it all together.
Cover with plastic wrap and leave for about 30 minutes. -

Cut the chili pepper and garlic.
Squeeze 1 by hand and put it in another bowl. -

Add sesame oil and garlic to a frying pan and heat over medium heat.

Point
・Prepare about 500-600g of Chinese cabbage.
・Always use fresh garlic.
・Replace sesame oil with olive oil for a more elegant taste.
・If you don't like spicy foods or have children in your household, you can omit the chili pepper.
・The Chinese cabbage in Step 1 may have sand accumulated at its roots, so wash the roots thoroughly.
・Cut the Chinese cabbage from step 1 into 1cm wide pieces. Cut off the core and cut the base into 1cm wide pieces.
・When wrapping and placing in step 1, place a weight if necessary. If not, press it with your hand and set aside.
-When cutting the chili pepper in step 2, use kitchen shears to cut it in half, remove the seeds, and cut into rounds.
・Remove the buds from the garlic in step 2 and roughly chop it.
・In step 3, while adding the seasonings, if the oil seems to splatter, turn off the heat, then turn on the heat again when mixing.
・Putting it on top of rice and topping with egg yolk makes it even more delicious.
