Ingredients

  • 豚バラ肉(薄切り) : 200g
  • キャベツ : 1/2個
  • (A)醤油 : 大さじ1と1/2
  • (A)酒 : 大さじ1と1/2
  • (A)みりん : 大さじ1と1/2
  • (A)砂糖 : 小さじ1
  • (A) Grated garlic : 小さじ1/2
  • (A) Grated ginger : 小さじ1/2
  • 酢 : 小さじ1
  • 片栗粉 : 適量
  • 塩コショウ : 適量
  • 白ごま : 適量
  • サラダ油 : 適量

Procedure

  1. 1) キャベツの下ごしらえをする 01:37

    Cut the cabbage into 5mm-wide strips, cutting through the fibers.
    Wash, drain and place in a heatproof bowl.
    Cover with plastic wrap and heat in a 600W microwave for 3 minutes.
    After draining in a colander and draining, wipe dry with kitchen paper and let cool.

    中火にかけて、3の巻き終わりを下にして並べる。
    フタをして弱火で3分蒸し焼きする。
    裏返してフタをして2~3分蒸し焼きする。
    焼けていない面を下にしてフタをして2~3分焼く。
    全体に焼き色がついたら、火を止める。
    キッチンペーパーで出てきた余分な脂を拭き取る。
    2を回しかけて中火にかける。
    とろみがつくまで裏返しながら煮詰める。
    酢を回しかけて30秒~1分加熱する。

  5. 5) 盛り付ける 08:36

    お皿に盛り、白ごまを振りかけて完成。

Point

・When rolling the cabbage in step 3, squeeze the water out of the cabbage with your hands to firm it up before rolling it so it won't fall apart and will be easier to roll.
・When grilling, use a thin layer of salad oil as the meat will release fat.
・Do not touch the meat too much when grilling, as the meat may unravel or fall apart.
・Rather than mixing vinegar into the sauce, sprinkle it at the end to bring out the flavor and richness.
