    枝豆は、水洗いする。
    枝豆の水気を切り、塩を振り、全体に揉み込む。

    お湯が沸いたら、枝豆を入れ、4分間茹でる。

    枝豆が茹であがったらザルにあげ、流水で手早く冷やす。
    塩を全体に振ってまぶし、冷蔵庫で5時間程冷やして馴染ませる。

・冷蔵庫で冷やす時間は、所要時間に含まない。
・枝豆を塩もみすることで、「表面の産毛が取れ、食べやすくなる。
・工程2で枝豆を茹でる際は、途中で味見をして茹で加減を確かめながら、茹で時間を調整すると良い。
