  • 大根 : 300g
  • 豚バラ薄切り肉 : 150g
  • 水 : 400~500ml
  • 生姜の薄切り : 3~4枚
  • (A)砂糖 : 大さじ1
  • (A)みりん : 大さじ2
  • (A)酒 : 大さじ2
  • (A)醤油 : 大さじ2

  1. 1) 下準備をする 01:11

    Cut the daikon radish into 2 cm wide rounds and peel off the skin.
    Cut into 3-4 equal sticks.
    Cut the pork belly into 4-5 cm wide pieces.

  2. 2) 煮る 03:17

    Add water, daikon radish, pork belly, and thinly sliced ginger to a pot.
    Bring to a boil over high heat.
    Remove the lye and simmer over medium heat for about 10 minutes.
    Add (A), mix lightly, and simmer over medium heat for 10-15 minutes.
    Arrange on a plate and you're done.

・大根は、短時間で味が染みるように皮を剥いて使用する。
・大根は棒状に切ることで、短時間でも味が染みやすくなる。
・豚バラ肉は、固くならないように広げて入れる。
・水から煮ていくことで、旨味が出て味も染み込みやすくなる。
・具材がすべて浸かるまで水を入れる。
・煮る時は、蓋をせずに煮る。
・調味料は、大根の色が透き通ってきたら入れる。
・完成後、蓋をして粗熱を取ることでより味がなじむ。
