Ingredients

  • じゃがいも : 1個
  • にんじん : 1/2本
  • ブロッコリー : 1/2個
  • 玉ねぎ : 1/4 piece
  • 鶏もも肉 : 1/2枚
  • 薄力粉 : 大さじ1~2
  • 牛乳 : 250g
  • 塩 : 少々
  • コンソメ : 大さじ1
  • 白胡椒 : 少々
  • バター : 10g

    Peel the skin of the potatoes, remove the sprouts, and cut into bite-sized pieces.
    Wash the carrot well with water and cut into bite-sized pieces with the skin on.
    Place the cut potatoes and carrots in a heatproof dish.
    Lightly cover with plastic wrap and heat in a 600w microwave for 5-6 minutes.
    Wash the broccoli well with water, remove the tough skin, and cut into bite-sized pieces.
    Cut the tassel into bite-sized pieces.
    Cut the onion into thin slices.
    Cut the chicken thigh into bite-sized pieces.

    Place the chicken thighs skin side down in a pot and heat over high heat.
    When the skin is burnt, lightly fry over medium heat.
    Add potatoes, carrots and onions and stir.
    Sprinkle the cake flour and fry well while entwining the ingredients.
    Add milk, salt and consomme and mix well.
    When thickened, add broccoli.
    Add white pepper and butter and serve on a plate to complete.

・にんじんは皮ごと使用することで煮崩れしにくく、香りが出る。
・ブロッコリーはボウルに水を張り、つけ洗いしてしっかり奥まで洗う。
・ブロッコリーの房の部分は、根元に切り込みを入れ、手で割って細かくすると良い。
・玉ねぎは繊維に対して垂直に切ると火が入りやすくなる。
・煮る前に炒めることで、煮崩れしにくくなり、うま味が出る。
・薄力粉を入れよく炒めることで、具材に絡みきれいなとろみがつく。
・牛乳は成分無調整豆乳で代用可。
・ブロッコリーを後入れすることで、良い触感になる。柔らかめにする場合は、早めに入れる。
・鶏もも肉を炒める際に、鍋に引っ付きやすい場合は、バターを半分入れ、残りを仕上げで入れると良い。
