- 卵 : 3個
- 油(卵炒め用) : 大さじ1と1/2
- 油(ゴーヤ炒め用) : 大さじ1
- 塩 : ひとつまみ
- (A)酒 : 大さじ2
- (A)みりん : 大さじ2
- (A)きび砂糖 : 小さじ1/2
- (A)醤油 : 大さじ2
- (A)オイスターソース : 小さじ1
- ごま油 : 小さじ1
- いりごま : 大さじ1
- かつお節 : 2g

Remove both stems from the bitter melon, cut it in half lengthwise, and remove the seeds and pulp.
Slice the prepared bitter melon into thin slices about 1mm thick.
Crack the eggs into a bowl and beat until light. -

Add oil to a heated frying pan.
When the oil is hot, pour in the eggs from step 1 and mix with tongs to form a soft-boiled omelet.
Remove the eggs from the frying pan. -

2のフライパンへ油を足し、1のゴーヤと塩を入れる。
強火で焼き色がつくまで炒めたら、(A)を投入し絡める。
2の卵を戻し入れ、ほぐしながら全体を炒め絡める。
ごま油を入れ、混ぜ合わせる。
火を止め、いりごまとかつお節を投入し混ぜ合わせたら完成。
Point
・If you don't like the bitterness of bitter melon, soak it in water.
- In step 2, when the surface around the egg starts to solidify a little, use tongs or something similar to quickly mix and stir-fry until the inside becomes a soft-cooked omelet.
・When frying bitter melon, adding salt will improve its color and give it a glossy finish.
