ポリ袋に1と塩を入れ、全体に馴染ませ、1分間押さえたり揉んだりする。
空気を抜いて口を縛り、上にまな板と重石を乗せ10分漬ける。 -

Point
・The bottom part of the eggplant is delicious, so leave as much of it as possible when cutting off the stem.
