- Eggplant : 450g (3 large pieces)
- 万願寺とうがらし : 120g
- minced chicken : 150g

- (A)Miso : 大さじ5
- (A) Sugar : 大さじ5
- (A) Alcohol : 大さじ10
- 山椒粉 : 適量

Slice and remove the stems of the eggplant.
Cut in half lengthwise and thinly slice diagonally into 5mm widths.
Remove the stems from the Manganji chili peppers and cut them into 2-3 pieces. -

Heat a frying pan and add sesame oil.
Add the eggplant and fry over medium heat.
When the eggplant is browned, add the Manganji pepper and fry.
Transfer the eggplant and Manganji pepper to a plate, and add the minced chicken to the frying pan.
Stir-fry the minced chicken while crumbling it, and when cooked, add 2 and stir-fry.
Return the eggplant and Manganji pepper to the frying pan and stir-fry the whole. -

Point
・Manganji peppers can be substituted with bell peppers.
・You can use the eggplant without waste if you cut off the stem of the eggplant.
・If you want to reduce the sweetness, adjust the amount of sugar to 4 tablespoons.
・Vegetables such as onions and carrots may be added.
・Because the eggplant absorbs oil, it is good to use a lot of sesame oil.
