Ingredients
- shiitake mushroom : 4 small
- 小ネギ : 2本
- ちくわ : 2本
- 木綿豆腐 : 1/2丁
- 卵 : 1個
- (A)塩 : 適量
- (A)片栗粉 : 大さじ2
- 油揚げ : 5枚
- (B)水 : 200ml
- (B)醤油 : 小さじ2
- (B)みりん : 小さじ2
- (B)砂糖 : 小さじ1/2
- (B)だしの素 : 小さじ1

Cut off the stems from the shiitake mushrooms and chop them finely.
Cut the green onion into small pieces.
Cut the chikuwa into quarters lengthwise, then cut into 5mm pieces. -

Wrap the firm tofu in two layers of kitchen paper and place it in a heat-resistant container.
Heat in the microwave at 600W for 3 minutes and drain.
Remove the kitchen paper and break up the tofu until it loses its shape.
Add eggs and (A) and stir to loosen.

Point
・4 small shiitake mushrooms weighs 60g.
・1/2 block of firm tofu is 150g.
・When opening the fried tofu in step 3, it will be easier to open it by rolling it from above with chopsticks.
・During step 4, make sure to fill the tofu up to the corners.
・During step 5, turn 4 over halfway through so that the flavor is evenly absorbed throughout.
・By combining chopped ingredients with tofu and eggs, it becomes delicious.
