Procedure

    Separate the eggs into yolks and whites, place the egg whites in a meringue maker and the egg yolks in a bowl.
    Add sugar to the egg whites and beat well.

    Add 1/3 of the meringue to the lightly beaten egg yolks and mix with a whisk until combined.
    Once the mixture is evenly mixed, add the remaining meringue and mix by cutting with a rubber spatula and scooping from the bottom.
    Add the rice flour and mix with a rubber spatula, scraping from the bottom until smooth.

  3. 3) 焼く 03:35

    生地を流し入れ、軽く表面を整える。
    アルミホイルで蓋をし、10~15分焼く。
    焼き色がついたら火を止め、表面が焼けていない場合は再度蓋をして余熱で火を通す。
    表面も焼けたらラップで包んで粗熱を取る。

  4. 4) 巻く 05:07

    クッキングシートの上にスポンジを置き、絞るだけホイップを絞り出して均等な厚さに塗り広げる。
    端から丸めて、形を整える。
    冷蔵庫で1~2時間冷やしたら完成。

Point

・Use a 20cm frying pan.
・You can use a hand mixer instead of a meringue maker.
- Thoroughly wipe off any oil and moisture from the meringue maker.
・If egg yolk gets into the egg whites, they will no longer foam.
- It is done when the underside is browned and the surface of the dough is dry.
・Time required to cool in the refrigerator is not included in the total time.
