  • 長いも : 200g
  • 大葉 : 20枚
  • (A) Soy sauce : 大さじ4
  • (A) Mirin : 大さじ2
  • (A) Water : 大さじ3
  • (A) Vinegar : 大さじ1
  • (A) Sugar : 大さじ1/2
  • ごま油 : 大さじ1/2
  • にんにく : 1片
  • 唐辛子 : 1本

Procedure

  1. 1) Make the marinade 01:27

    Add (A) to a small saucepan and place over medium heat while stirring.
    Once boiling, heat for 30 seconds and turn off the heat.
    Peel and slice the garlic thinly, remove the sprouts and add.
    Cut the chilli pepper in half using kitchen scissors, remove the seeds and add in slices.
    Remove from heat and let cool.

  2. 2) 長いもを大葉で巻く 03:25

    大葉を水洗いしてキッチンペーパーで水分を拭き取り、茎を切り落とす。
    長いもの皮を剥き、4~5㎝の長さに切って、約1㎝幅の拍子切りにする。
    大葉で長いもを巻き、巻き終わりを下にしておく。

  3. 3) 漬ける 05:02

    保存容器に2を並べて入れ、冷めた1をかける。
    ごま油を加えたら、表面にラップを張り付けて30分漬けたら完成。
