Ingredients

  • Chicken thigh (for fried chicken) : 300g
  • salt (for seasoning) : 少々
  • サフラン : ふたつまみ
  • 水 : 400ml
  • 玉ねぎ : 1/2個
  • ピーマン : 2個
  • トマト : 1個
  • にんにく : 1~2片
  • 米 : 2合
  • オリーブオイル : 大さじ1
  • 酒 : 大さじ2
  • Clams (sand removed) : 250g
  • salt (for seasoning) : 小さじ1
  • Lemon (cut into wedges) : 適量
  • 粗びきこしょう : 適量
  • Parsley (chopped) : 適量

Procedure

    Sprinkle the chicken thighs with salt (for seasoning) and lightly rub them in.
    Wash rice lightly and drain well.

    玉ねぎをみじん切りにする。
    ピーマンを粗めのみじん切りにする。
    トマトのへたを取り、1cm角に切る。
    にんにくをみじん切りにする。

  4. 4) 鶏もも肉を焼く 03:26

    フライパンにオリーブオイルをひき、鶏もも肉を皮目を下にして中火で3~4分焼く。
    皮目に焼き色がついたら、一旦取り出しておく。

  5. 5) 野菜を炒める 04:16

    鶏もも肉を焼いたフライパンに、3で切った玉ねぎ、にんにく、ピーマンを入れ、しんなりするまで中火で3~4分炒める。
    しんなりしたら、トマトを加え、水分をしっかり飛ばし、ペースト状になるまで中火で5~6分炒める。

Point

・Compared to seafood, paella with meat is easier to control the moisture content and less likely to fail.
・Chicken thighs can be chicken wings, pork shoulder loin, or pork cutlet.
・Curry powder or turmeric can be substituted for saffron. Saffron is recommended for authentic taste.
・Stir-fry the vegetables until they become a paste, as the vegetables will not be finished well if they are left with moisture.
・After adding the rice, if you stir it, the rice will become sticky, so shake the frying pan when mixing.
・When finishing, you can put grilled vegetables such as paprika, peppers, and eggplants on top.
