Ingredients
- chicken breast : 1 sheet
- 塩 : 小さじ1/2
- 片栗粉 : 大さじ1
- Olive oil (for chicken breast) : 大さじ1
- 玉ねぎ : 1/2個

- トマトジュース : 200ml
- 水 : 200ml
- しめじ : 1パック
- みりん : 大さじ1
- 醤油 : 大さじ1

Prepare the chicken breast

Remove skin from chicken breast.
Cut into sticks and cut into bite-sized pieces.
Put in a poly bag.
Add salt, potato starch, and olive oil (for chicken breast) in that order and mix. -

Separate the shimeji mushrooms into small bunches and tear them with your hands.
Crush the garlic cloves with a wooden spatula, remove the skin, remove the stem and chop roughly. -

Add onions and fry.
Add garlic and fry.
When the whole is cooked, add ketchup and fry to evaporate the moisture.
Add tomato juice when the ketchup is about to burn.

Add water and shimeji mushrooms and mix.
Reduce the heat when it boils.
Add 1 piece by piece and cover without mixing.
Once boiling, reduce heat to medium-low and simmer for 5 minutes.
Mix and thicken.
After tasting, add mirin and soy sauce and mix to complete.

・You can substitute shimeji mushrooms with your favorite mushrooms.
Use low-salt tomato juice.
・Pull the knife when cutting.
・Use the stem of the onion as well.
・Do not wash shimeji mushrooms.
・Grated ginger can be substituted for garlic.
・Put water (not listed) in a frying pan and put it on fire.
・Olive oil (for heating) can be substituted with your favorite oil.
・If you use other vegetables, add them at the same time as the shimeji mushrooms.
