- (A)水 : 1カップ
- 出汁粉 : 小さじ1
- 塩 : 小さじ1/3
- 片栗粉 : 小さじ2
- (B)水 : 小さじ2

Stir the water and dashi powder in a pot and bring to a boil over medium heat.
Put the eggs in a bowl and break them apart.
Dissolve the potato starch in the water of B. -

When the pot of 1 comes to a boil, add salt and potato starch dissolved in water in that order, and stir.

Turn off the heat and add the eggs while stirring with a whisk.
Bring to a boil again over medium heat and you're done.
Point
・出汁粉は和風だしや鶏がらスープの素などお好みのものでOK。
・手順3で卵を加えかき混ぜる際は、出汁と卵を一体化させる感覚をイメージするとよい。
・手順3で最後に火を入れる際、混ぜないと卵が固まってしまうので、必ず混ぜながら火を通す。
・完成した卵スープは、ご飯にかけたり茶碗蒸し風にしたりアレンジするのも美味しい。
