Procedure

  1. 1) そうめんを茹でる 02:34

    鍋に湯を沸かし、手延べそうめんを入れ30秒茹でる。
    30秒経ったらザルに上げ、流水で冷やして水気をよく切る。

    フライパンに油を敷き、中火にして1を入れる。
    (A)と手で揉んで細かくした鰹節を加えて炒める。

    お皿に2を盛り付け、刻みのり、ごま、小ねぎをのせて完成。

Point

・Do not boil for more than 30 seconds so that the somen will remain chewy and go down smoothly.
・Chill the hard-boiled noodles in water and quickly stir-fry them.
