- Chinese yam : 500g
- 大葉 : 10枚
- (A) Dashi : 400cc
- (A) Soy sauce : 100cc
- (A) Mirin : 100cc
- 鷹の爪 : 1本
- dried bonito : 適量
- だしパック : 1袋

Prepare the yam

Roast the yam and remove the fibrous roots.
Cut the yam into 1.5 cm wide slices with the skin on.
Cut the hawk's claws into rings.
Cut off the leaf stem. -

Add (A) to the pot and heat the dashi pack containing the dried bonito flakes.
Once boiling, turn off the heat, add the hawk's claws and remove the heat. -

Cover tightly with plastic wrap and refrigerate for 2-3 days.

Point
・Soak the hawk's claws in water before using them to make them easier to cut.
・You can use as much perilla as you like.
・Mentsuyu may be substituted for the dipping sauce.
・By doing the second bonito in step 2, it will be finished with the umami of bonito. You can use the amount of bonito flakes you like in the dashi pack.
・Can be stored in the refrigerator for about a week.
