- (A)めんつゆ(2倍濃縮) : 大さじ3
- (A)ごま油 : 大さじ1と1/2
- 鰹節 : 適量

Cut off the stems of the washed shiso leaves, chop them finely, and put them in a bowl.
Add (A) and mix well. -

なすの下ごしらえ

なすのガクだけを切り取る。
皮をピーラーで剝く。
縦に2本切り込みを入れ、90℃回して同じように2本切り込みを入れる。
1個ずつラップで包み、600W の電子レンジで2分加熱する。
2分経ったら、裏返し、再度2分加熱する。
なすが堅い場合は、追加で1分加熱する。 -

お皿に盛り付けをする

Point
・めんつゆ、ごま油の代わりにポン酢や醤油を使用しても可。
・なすのガクの部分に包丁を上から刺し、なすを回してガクだけ切り落とすようにする。
・なすをラップで包み、電子レンジで温めることで、なすの水分で蒸し焼きにすることができてみずみずしく仕上がる。
・2の後に、氷水で冷やしてから水気を切り、冷やして食べることもできる。
