Ingredients
- lotus root : 250g
- (A) Soy sauce : 大さじ1
- (A)Cooking sake : 大さじ1
- (A) Sugar : 小さじ1
- (A)Oyster sauce : 小さじ1
- (A) Grated ginger : 小さじ1/2
- (A) Grated garlic : 小さじ1
- (B) Potato starch : 大さじ3
- (B) Light flour : 大さじ2
- 揚げ油 : 適量

Prepare the lotus roots

Peel the skin of the lotus root with a peeler, cut off both ends, and cut into pieces a little less than 1cm wide.
If the lotus root is large, cut it in half.
Fill a bowl with water (not listed), add the lotus roots, and soak for 5 minutes to remove the scum.
After lightly washing with water, drain and pat dry with kitchen paper. -

Heat the oil to 170°C.
Fry the lotus root for 1 minute, then flip it over.
After frying for 2 minutes, lift the lotus roots with chopsticks to expose them to air.

・Cut off both ends of the lotus root, as they are dry.
・When cutting lotus roots, be careful not to cut your hands as they tend to roll.
・Be sure to remove the scum from lotus root, as it may leave a harsh residue or discolor.
・Adding oyster sauce for seasoning increases the flavor.
・The ideal temperature for step 4 is that when you put a chopstick in it, fine bubbles should come out from the tip.
・In the video for step 4, the lotus root is turned over after 1 minute, but the batter will peel off if you move it for the first 1 to 2 minutes, so be careful not to touch it.
・You can sprinkle lemon on it if you like.
