砂糖を加えて混ぜる。
白だしと2を入れてよく混ぜる。
茶漉しで卵液を漉す。

Line a frying pan for eggs with kitchen paper soaked in salad oil.
Heat the frying pan over medium heat for 30 seconds.
Scoop up 3 with a ladle and pour it in.
Spread 3 all over the frying pan.
Once the surface has hardened a little, use a rubber spatula to roll it from the front to the back.
Pour the ladle into the empty space in the frying pan.
Pour the egg mixture under the rolled egg earlier.
Once the surface has hardened, roll it from the back to the front.
Using kitchen paper soaked in vegetable oil, re-apply vegetable oil to the entire frying pan.
Move the egg to the back, pour the scooped amount with a ladle all over, and roll it from the back to the front.
Repeat until all 3 are used.
Use the edge of the frying pan and a rubber spatula to shape it. -

Finish by cutting into bite-sized pieces.
Point
・I use L size eggs, but you can also use M size eggs.
- Mentsuyu can be substituted for white soup stock.
-Adding mayonnaise to eggs improves the texture.
-When adding the sugar in step 2, mix quickly as the sugar will absorb the moisture from the eggs.
- Straining the egg liquid in step 3 will improve the quality of the tamagoyaki.
・If there are ingredients in the egg mixture, it is best to scoop them out with a ladle before baking.
-If it looks like it's going to burn in step 4, lower the heat to medium-low.
・When removing the rough heat in step 5, you can prevent the surface from drying by wrapping it in kitchen paper.
