Chop the bitter chocolate with a knife.
Place in a heatproof bowl and add unsalted butter.
Heat in the microwave at 600W for 1 minute.
Crack the eggs into another bowl and beat.
Mix melted bitter chocolate and unsalted butter with a whisk.
Add cane sugar and mix.
Add fresh cream and mix.
Mix while adding the beaten eggs.
Add rum and mix.
Sift in (A) and mix.
Switch to a rubber spatula and mix. -
