- (A)Cooking sake : 大さじ1/2
- 水 : 40ml
- 薄力粉 : 大さじ2と1/2
- 片栗粉 : 大さじ1
- 青のり : 小さじ1/2

Add (A) to a bowl and mix well.
Add water and mix.
Add potato starch and mix well.
Add green seaweed and mix.
Cover with plastic wrap and chill in the refrigerator. -

Preparation of chikuwa

Cut the chikuwa in half lengthwise.
Turn the notched side up and roll it up from the front.
Secure the end of the roll in the middle with a toothpick.
Insert toothpicks into both ends.
Cut into 3 equal parts. -

Add the remaining flour, mix and add step 2.
Mix lightly to blend. -

フライパンに油を入れ、火にかけて1分半程温める。
弱めの中火にし、3を入れて中火にする。
1分揚げたら裏返し、1分揚げる。
取り上げて3分油を切り、爪楊枝を外す。
お皿に盛り付けて完成。
Point
-Using soft flour, potato starch, cooking sake, and mayonnaise in the batter improves the texture.
・You may use sea lettuce for green seaweed.
・In step 1, add the cooking wine little by little and mix.
- Adding soft flour just before use suppresses gluten content and improves the texture.
・Wrap the soft flour and chill it in the refrigerator.
・When rolling the chikuwa in step 2, roll it as tightly as possible.
・When adding shiso leaves, roll them together when rolling the chikuwa.
・When removing the toothpick in step 4, it is best to rotate it while removing it.
