Cut the onion in half and then slice.
Crack the eggs into a bowl and stir. -

Add oil to a heated frying pan.
Add eggs.
Add rice.
Break it up with a ladle and fry over high heat.
Add salt, pepper, and umami seasoning.
Add sake and soy sauce.
Add the lettuce and onions from step 1.
Once stir-fried, place the fried rice on a plate. -

Heat the frying pan from step 2 again.
Add croquettes.
Bake over medium heat, crushing the croquettes with a ladle.
When both sides are browned, place on plate 3.
Pour the sauce over the croquettes and it's done.
Point
・If using cold rice, warm it before cooking.
・When eggs are half-cooked and mixed with rice, they will not stick together.
・To preserve the texture of the lettuce and onions, stir fry lightly after adding them.
・When you fry croquettes in a frying pan, they become more fragrant.
