Ingredients

  • きゅうり : 3本(280~300g)
  • オクラ : 6本
  • 大葉 : 10枚
  • みょうが : 2本
  • 生姜 : 15g
  • 砂糖 : 小さじ1と1/2
  • (A) White soup stock : 大さじ2
  • (A) Soy sauce : 小さじ1/2
  • (A) Vinegar : 小さじ2
  • (A) White sesame : 大さじ1
  • (A) Ground sesame : 大さじ1

Procedure

  1. 1) オクラの下準備をする 02:05

    Sprinkle 1/2 teaspoon of salt (not included in the recipe) on the okra and rub it on a board.
    Cut off the dry parts of the stem and remove the calyx.
    Pour water (not included in the recipe) into a pot and heat.
    Once boiling, add the okra and boil for 30 seconds.
    Remove from the pot and place in ice water (not included in the recipe) and chill for 1 to 2 minutes.

  2. 2) きゅうりの下準備をする 04:05

    きゅうりの上部を1.5cm切り落とし、断面を合わせて30秒~1分擦った後、水洗いする。
    下部を切り落とし、縦半分に切り斜め薄切りにしてボウルに移す。

  3. 3) 材料を切る 05:35

    1のオクラの水分をキッチンペーパーで拭き取る。
    5mm幅の斜め薄切りにして2のボウルに加える。
    みょうがの根元を薄く切り落とし、縦半分に切る。
    根本部分に軽く切り込みを入れて薄切りにし、水(分量外)に5分さらす。
    大葉の茎を切り落とし、千切りにしてほぐし2のボウルに加える。
    生姜の皮を剥き、千切りにして2のボウルに加える。
    みょうがの水を切り、キッチンペーパーで水気を拭き取り2のボウルに加える。

  4. 4) 漬ける 08:40

    ボウルの野菜全体を混ぜる。
    砂糖を加えて混ぜ、馴染ませる。
    (A)を加えてよく混ぜる。
    表面にラップを張り付け、上にお皿を乗せた上に重しを乗せる。
    10分漬けたら完成。

Point

You can add green onions if you like.
