Ingredients
- 冬瓜 : 500g
- 椎茸 : 5枚
- 長ねぎ : 1/3本
- ニラ : 1/2束
- 豚こま肉 : 180g
- 生姜 : 1片
- (A)水 : 300cc
- (A)酒 : 50cc
- (A)鶏ガラスープの素 : 小さじ2
- (B) Oyster sauce : 大さじ4
- (B) Soy sauce : 大さじ1
- (B) Sugar : 大さじ1
- (B) Vinegar : 大さじ1
- 酒溶き片栗粉 : 適量
- 卵 : 2個
- ご飯 : 適量

具材を切る

Peel the winter melon and cut it into 4 equal parts lengthwise.
Scrape away the pith with a spoon.
Cut small grid patterns into the skin side.
Cut into 1cm wide sectors.
Slice the ginger into thin strips.
Slice the green onions diagonally.
Cut the chives into 2-3cm pieces.
Cut the shiitake mushrooms into bite-sized pieces.
Cut the pork into bite-sized pieces. -

Heat a frying pan over the fire until it smokes.
Add sesame oil and mix well, then add ginger.
When the aroma comes out, add the minced pork and stir fry.
Once the pork is cooked, add the green onions and stir fry.
Add the shiitake mushrooms and stir fry.
Add the winter melon and stir fry.
Once the oil has spread evenly and is well mixed, add (A).
Once boiling, cover with aluminum foil and simmer for 5 minutes. -

Point
- The skin side of the winter melon is hard, so cutting it into a grid pattern will help it cook evenly and have a better texture.
- If you thicken it with potato starch dissolved in sake instead of water, the flavor of the sake will be added and it will taste even better.

・Pork mince can be substituted with other parts such as pork belly.
