Ingredients
- Chickpeas : 420g (1 can after draining. 200g when dry)

- lemon juice : 1/4 cup (60 ml)
- Tahini (or white sesame seeds) : 1/4 cup (60 ml)
- Olive oil : 2 tablespoons
- salt : a little
- garlic : 1 piece (if you like)
- cumin : 1/2 teaspoon (if you like)
- Paprika powder (for decoration) : Appropriate amount

Add baking powder to dried chickpeas soaked in water for 8 hours to overnight and bring to a boil in a pan with plenty of water. When it boils, reduce the heat to low and simmer for about 3 hours until it becomes soft.
When using canned chickpeas, add baking powder and simmer for 20 minutes.
When the chickpeas are soft, open them in a colander, drain the water, and remove the heat. -

Mix tahini (or white sesame seeds) and lemon juice in a food processor and add olive oil and salt. Add chickpeas little by little to make a paste. If you taste it and it is not salty, add salt. Add cumin and chopped garlic if you like and stir.
