  • 鶏胸肉 : 1枚
  • (A)醤油 : 大さじ2
  • (A)砂糖 : 大さじ1
  • (A)酒 : 大さじ1/2
  • (A)ごま油 : 大さじ1/2
  • (A)おろし生姜 : 3cm
  • (A)ブラックペッパー(お好みで) : 適量
  • 片栗粉 : 適量(約大さじ4)
  • サラダ油 : 大さじ4〜5

  1. 1) 鶏胸肉の下処理をする 02:24

    鶏胸肉を横から切れ込みを入れて開き、ラップをのせた上から麺棒でよく叩いて薄く伸ばす。

  2. 2) 鶏胸肉に下味を付ける 04:11

    ボウルまたは袋に鶏胸肉と(A)を全て入れてよく揉み込み5分間置く。

  3. 3) 片栗粉をまぶす 05:43

・鶏胸肉でもパサつかずしっとり仕上げることができる鶏竜田のレシピ。
・鶏胸肉を切り開き叩いて薄くすることで、加熱時間の短縮になり、繊維も潰れ、柔らかく仕上がる。
・麺棒がない場合はコップの底などを使用して叩くと良い。
・生姜の代わりにニンニクで代用しても可。
・歯ごたえ良く仕上げるために、衣は揚げる直前に付けること。
・鶏胸肉の体積が大きいので少しの油でもしっかりと鶏胸肉を揚げることができる。
・弱火でじっくりと揚げることで鶏胸肉が柔らかく仕上がる。
