  • Pork belly : 500g
  • 玉ねぎ : 1個
  • 塩 : 7g
  • 白ワイン : 200cc
  • 水 : 150cc
  • ローリエ : 1枚
  • 黒こしょう : 適量

Procedure

    豚バラ肉の入っている鍋に、加える。

    鍋に水、ローリエ、黒こしょうを加え、火をかけて沸騰させる。
    沸騰したら蓋をし、弱火で2~3時間程煮込む。

  7. 7) 肉と煮汁を分ける 04:46

    時間が経ったら豚バラ肉を取り出し、煮汁を濾す。
    濾した煮汁を冷蔵庫で冷やし、豚バラ肉はフォークで潰す。

  8. 8) 肉と煮汁を混ぜる 05:53

    冷やした煮汁の、表面にある白い脂を取り除く。
    煮汁を潰した豚バラ肉に加え、混ぜ合わせる。
    仕上げに黒こしょうをして、完成。

  9. 9) 盛り付ける 07:07

    保存容器などに入れ、溶かした脂を上から流し入れる。
