Ingredients
- そうめん : 100g
- 鰹節 : 6g
- (A) Soy sauce : 4 tbsp
- (A)みりん : 大さじ4
- (A) Sake : 大さじ2
- (A)味の素 : 6振り
- (A)砂糖 : 小さじ1/3
- 冷水 : 250cc
- 氷水 : 適量
- 卵黄 : 1個

Heat the dried bonito in a 600w microwave oven for 50 seconds.
After heating, loosen it by hand and make it into a powder. -

Make mentsuyu

Put (A) and dried bonito in a pan and boil to remove alcohol.
When the alcohol has blown off, add cold water and cool in the freezer. -

Boil somen

Boil the water in a frying pan over medium heat.
Add somen noodles and boil according to the time indicated on the bag.
After boiling, open it in a colander, wash it with running water, and drain it.
Put the colander in ice water, wash it gently, and drain it lightly. -

そうめんを、器に盛り付ける。
めんつゆを器に盛り、卵黄を浮かべたら完成。
Point
・ When making mentsuyu, boil the alcohol thoroughly and remove it.
・ Be sure to follow the indicated time on the bag when boiling somen noodles.
・ Put somen in ice water and wash until it cools down.
・ Egg yolk does not have to be added.
・ If you like, you can add condiments.
・ Adjust the amount of somen to your liking.
