Ingredients

  • 水 : 大さじ1と1/2
  • お湯 : 大さじ1と1/2

Procedure

  1. 1) カラメルソースを作る 02:26

    Put 40g of sugar in the center of the frying pan and sprinkle with water.
    When the water has spread all over the sugar, put it on medium heat and wait until it boils.
    When the sugar edges start to turn brown, turn the frying pan to cook the whole thing.
    When the whole turns brown, turn off the heat and heat with residual heat.
    When it turns golden brown, add hot water, cover it immediately, and turn the frying pan.
    When the boiling noise is reduced, transfer to a container and let it cool.

    Put milk and 30g of sugar in a pan and heat over low medium heat to prevent boiling.
    Heat for 40 to 50 seconds and turn off the heat when the sugar has melted.
    Put egg yolks in a bowl, melt and loosen, add half of the cream and mix.

    Add milk, sugar and vanilla oil in a pan and mix for 30-40 seconds.

    容器にキッチンペーパーを被せて粗熱を取り、冷蔵庫で半日~1日冷やして完成。

Point

・100~120ml程度の容器を使用する。
・カラメルソースは沸騰して色が変わるまで、絶対に触らないこと。
・カラメルソースがはねるので、火傷に注意。
・注ぎ口がついた入れ物に一旦入れると、容器に注ぎやすい。
・牛乳を沸騰させると風味が変わり、膜も出来るので、沸騰させないこと。
・フライパンに布巾と容器を入れて、蓋が閉まるか先にチェックしておく。
・蒸す際に布巾を敷くと衝撃を抑えられ、すが入りにくくなり、なめらかに仕上がる。
・蒸し時間が足りない場合は、追加で1~5分程度加熱する。
・バニラオイルがおすすめだが、無ければバニラエッセンスで代用可能。
・動物性生クリームの35%がおすすめだが、植物性生クリームでも良い。
