Ingredients

  • 木綿豆腐 : 1丁(300g)
  • 鶏むね肉 : 100g
  • 干ししいたけ : 3枚
  • 絹さや : 30g
  • にんじん : 30g
  • 長ねぎ : 30g
  • 溶き卵 : 2個
  • (A)塩 : ひとつまみ
  • (B)砂糖 : 大さじ1
  • (B)塩 : 小さじ1/2
  • (B)醤油 : 小さじ1
  • (B)干ししいたけの戻し汁 : 大さじ2~3
  • ごま油 : 大さじ1

Procedure

  1. 1) Boil silk pods and tofu 00:18

    Remove the streaks from the silk pods and boil in salted water for 1 minute.
    Take out the silk pods, add tofu and boil lightly.

  2. 2) 絹さやとにんじんを切る 01:14

    絹さやを、1cm幅に斜め切りする。
    にんじんを、太めの千切りにする。

    戻した干ししいたけの軸を切り、細切りする。
    鶏むね肉を1cm角に切り、長ねぎを小口切りする。

  4. 4) 具材を炒める 02:09

    フライパンにごま油を熱し、長ねぎを炒める。
    にんじん、干ししいたけを加え、炒める。

  5. 5) 鶏肉と豆腐を炒める 02:41

    全体に油が回ったら鶏むね肉を加え、炒める。
    豆腐を加えて崩し、(A)の塩をふって強火で炒める。

  6. 6) 調味料と卵を加える 03:35

    水気が飛んだら(B)を加え、再度水気を飛ばす。
    溶き卵を回し入れ、固まってきたら軽く混ぜる。

  7. 7) 仕上げる 04:22

    絹さやを加えて軽く混ぜ、皿に盛ったら完成。

Point

・ Chicken thighs may be used.
・ Instead of silk pods, snap peas and green beans may be used.
・ Soak dried shiitake mushrooms in water overnight and put them back.
