  • ごま油 : 大さじ1/2
  • (A)醤油 : 大さじ1
  • (A)酒 : 大さじ1
  • (A)みりん : 大さじ1
  • (A)砂糖 : 大さじ1
  • (A)鶏ガラスープの素 : 小さじ1/2
  • 厚揚げ : 2枚(300g)
  • (B)小麦粉 : 大さじ1
  • (B)塩 : 少々

Procedure

  1. 1) 小松菜の下準備をする 00:17

    Put all A in a bowl and stir lightly to make a combined seasoning.
    Cut the komatsuna into individual pieces, wash them, and then cut them into 5 cm wide pieces.
    Place the cut komatsuna and sesame oil in a bowl and mix well.

  2. 2) 厚揚げの下準備をする 02:44

    キッチンペーパーで表面の油を取り除いた厚揚げを、1口サイズに切る。
    ポリ袋に切った厚揚げ、Bを入れ、袋を振って馴染ませる。

  3. 3) 材料を炒める 04:37

    フライパンを中火であたため、油(分量外)を敷く。
    2をフライパンに並べ、表裏ともに焼き目をつける。
    1の小松菜、合わせ調味料を順に加え、炒めたら完成。

Point

・手順1で小松菜を1本ずつ切り分けると、根本まですべて食べられる。
・手順1で小松菜にごま油を絡めておくと、水分が外に出にくくなり歯触りよく仕上がる。
・手順3で厚揚げに焼き色をつける際は、フライパンをゆらしながら焼くと引っつくのを防げる。
・手順3で小松菜を加えたあとは、小松菜の歯触りを残すよう炒め時間を短めにするとよい。
