- Chicken thigh : 1 sheet
- (B)塩胡椒 : 少々
- (B)醤油 : 少々
- (B)酒 : 少々
- 片栗粉 : 適量
- 長ネギ : 1/3本
- 生姜 : 1片
- (A)醤油 : 大さじ2
- (A)酢 : 大さじ2
- (A)砂糖 : 大さじ2
- (A)豆板醤 : 小さじ1
- (A)ごま油 : 大さじ1/2
- (A)白ごま : 小さじ1
- サラダ油 : 大さじ3

Put (A) in a bowl and mix.
Shred the ginger with the skin on.
Thinly slice the leek diagonally and loosen.
Add ginger and green onion to (A) and mix. -

Prepare chicken thighs

Remove excess skin and bones from chicken thighs.
Cut in half lengthwise and open the thick part.
Make light cuts to cut the sinews, and hit both sides with the back of a knife.
Add (B) to both sides and mix well.
Sprinkle with potato starch and remove excess powder. -

Heat a frying pan to warm it up and add salad oil.
Put the skin side down from step 2 and bake for 3 minutes over high to medium heat while pressing with a spatula.
When browned, turn over and bake for 4 minutes.
Take it out, cut it into bite-size pieces, and put it on a plate.

Point
・If you don't like the spiciness of step 1, you can omit the chili bean sauce or add garlic if you like.
・The skin of chicken thighs shrinks easily, so bake the skin first.
・In step 3, the texture of the surface will be lost if steamed, so it is better to bake without using a lid.
・You can put it on top of rice, add red pickled ginger, mayonnaise, sprinkle shichimi pepper and arrange it in a bowl.
