Ingredients

  • eggplant : Two
  • 大葉 : 5枚
  • Soft flour (for coating) : 50g
  • Soft flour (for eggplant) : 適量
  • 卵 : 1/2個
  • (B) water : 80ml
  • (B) cooking sake : 大さじ1
  • マヨネーズ : 大さじ1
  • 揚げ油 : 適量
  • (A) water : 100ml
  • (A) Soy sauce : 大さじ1
  • (A) Mirin : 大さじ1
  • (A) dashi stock : 小さじ1/4

Procedure

    Put (A) in a heat-resistant bowl and mix.
    Heat in a 600W microwave for 1 minute and 30 seconds and mix.

    Cut off the stem of the eggplant and cut it vertically into 4 equal parts.
    Leave the top part of the eggplant and make a 1.5-2 cm wide slit vertically.

    お皿に盛り、器に1を入れて完成。

Point

・You can boil the tempura sauce in step 1 in a pot instead of in the microwave.
・Taste the mirin at the end of step 1. If you are concerned about the alcohol in the mirin, heat it in the microwave little by little.

・For step 5, use frying oil about 1-2 cm from the bottom of the frying pan.
