- 生姜 : 1片
- (A)コチュジャン : 大さじ1と1/2
- (A)一味唐辛子 : 大さじ1/2
- (A)水飴 : 大さじ2
- (A)けずり粉(魚粉) : 大さじ1
- (A)めんつゆ : 大さじ1と1/2
- (A)ごま油 : 大さじ1
- いりごま : 大さじ1

Procedure

Cut off the ends of the cucumber, cut it in half lengthwise, and then cut it into quarters.
Transfer to a bowl, add salt and mix well.
Put a weight on it and leave it for 1 hour.
Transfer to a colander, wash off the salt with water, drain and return to the bowl. -

Grate garlic and ginger and add to 1.
Then add (A) and sesame seeds while grinding them by hand, and mix well to blend.
Cover with cling wrap and soak in the refrigerator for 3 hours to 1 night to complete.
Point
・You can pickle chives, onions, and green onions together.
・Instead of the hard-to-find ingredients used in authentic kimchi, we use chili peppers, gochujang, shavings powder, and mentsuyu that are easy to obtain.
・If you don't have starch syrup, you can use sugar or oligosaccharide instead.
・The mentsuyu is double concentrated.
・It is recommended to use raw garlic to bring out the aroma of the garlic.
・The time to drain the cucumber and the time to soak it are not included in the required time.
