Preparing the bitter melon

Cut off both ends of the bitter melon, cut it in half lengthwise and remove the seeds with a spoon.
Slice thinly and transfer to a bowl.
Add salt (not included in the recipe) and rub in the salt, then pour in hot water (not included in the recipe) and leave for 10 minutes. -

Point
・You can also eat bitter melon seeds as tempura.
- If you rub bitter melon with salt and then soak it in hot water, the bitterness will be removed and the color will develop.
-If you are eating it right away, you can add sliced onions, but this will shorten the shelf life.
- Adjust the amount of mayonnaise while tasting so that it is evenly coated.
