Ingredients
- Shiitake : 1 pack
- Minced pork : 100g
- Chopped onion : 1/4 piece
- egg : 1 piece
- oil : 1 tablespoon
- Soy sauce : 2 tablespoons
- Liquor : 2 tablespoons
- sweet sake : 2 tablespoons
- sugar : 1 tablespoon
- Salt and pepper (for seasoning seeds) : a little

Take the shiitake mushrooms, take only the hard part at the tip of the shiitake mushrooms, and chop them.
Add minced meat, chopped onion, juku, salt and pepper, and eggs to the bowl and knead well. Add potato starch and knead further. -

Fill the shiitake mushrooms with seeds and sprinkle with potato starch (not included in the amount) from above. -

Bake shiitake mushrooms

Add oil to a frying pan, put the shiitake mushrooms face down, cover and bake on low heat for about 6 minutes.
Turn it over, add sake, and steam for about 5 minutes.
When it's cooked, add the sauce, bake until it shines, serve it, sprinkle all-purpose onions and sesame seeds, and you're done!
Point
If you sprinkle the shiitake mushrooms with potato starch, the sauce will get entangled well, so sprinkle it firmly on the whole.
When baking the shiitake mushroom surface, add sake to prevent it from burning, and then steam it. If you feel the elasticity by touching it with your finger, it is proof that it is cooked.
