Ingredients

  • ちくわ : 5本
  • 玉ねぎ : 1個
  • Water (for clothing) : 80ml

  • (A) Soy sauce : 大さじ1
  • (A)Mirin : 大さじ1
  • (A) Dashi base : 小さじ1/4
  • (B) Potato starch : 大さじ2
  • (B) Light flour (for batter) : 大さじ5
  • Light flour (for coating) : 適量

Procedure

  1. 1) make tentsuyu 01:40

    Mix (A) in a bowl, cover with plastic wrap and heat in the microwave at 600W for 1 minute and 30 seconds.
    Remove the plastic wrap and remove from heat.

    Put mayonnaise in a bowl and mix while adding cooking wine little by little.
    Add water (for batter) and mix, then add (B) and mix well.
    Cover with plastic wrap and transfer to the refrigerator to cool.

    Peel the onion and cut into 1cm wide slices.
    Cut out the center of the onion and sprinkle flour (for coating) on top.
    Insert the tip of the kitchen scissors diagonally into the chikuwa, and while rotating, cut the chikuwa into 1cm wide spirals.

    Insert a toothpick into the beginning and end of the chikuwa roll.

    Sprinkle flour (for coating) on the center of the onions from step 3, coat with step 2, and fry in the same way.

Point

・Adding mayonnaise, potato starch, and cooking sake to the batter improves the texture.
- Chilling the batter in the refrigerator during step 2 will improve the texture.
・During step 3, if the chikuwa breaks while rolling, it's a good idea to insert a toothpick into the cut part to secure it.
・During step 5, exposing 4 to air once will make it delicious.
