Ingredients
- 大根 : 1/2本
- 塩 : ふたつまみ
- 卵 : 3個
- 水 : 800ml
- 昆布 : 1枚
- かつお節 : 15g

- 手羽先 : 4本
- ウィンナー : 6本
- ひら天 : 2~3枚
- ちくわ : 2本

Cut off the tip of the radish, cut into 2cm wide slices, and peel the skin.
Make a cross-shaped cut on the surface of the radish and make a bevel.
Transfer the radish to a vat, sprinkle salt on both sides, and let it sit for 10 to 20 minutes.
Make 4 diagonal cuts in the sausage.
Peel the potatoes and cut them in half.
Cut the hanpen into 4 equal parts.
Cut the chikuwa diagonally into two equal parts.
Make a slit on the other side of the skin of the chicken wing.
Boil the eggs for 10 minutes, boil them, peel them and leave them in water for 10 minutes. -

Add water and hand-torn konbu to a clay pot, and boil over very low heat for 15 to 30 minutes.
Remove the kombu and heat over medium heat until just before boiling.
Place chitin paper on a colander, place the bonito flakes on top of it, and submerge it in the pot for 2 to 3 minutes, then remove the colander. -

Wipe the moisture from the radish with kitchen paper.
Add the firmest daikon radish, potatoes, chicken wings, hanpen, hirataen, wiener, boiled eggs, and chikuwa to the soup stock in the pot, followed by soy sauce, sake, and mirin.
Simmer on low heat for 1 hour and it's done.
Point
・A simple oden made with soy sauce, sake, mirin, and the flavor of the ingredients and dashi stock.
- Wieners and chicken wings bring out the flavor of meat and soup stock, while hanpen and chikuwa chicken give out the flavor of seafood and soup stock, so be sure to add them.
-The lower part of the radish has a strong bitter taste, so it is better to use the part closest to the leaves.
・If you sprinkle salt on the daikon radish and leave it aside, it will be delicious even if you don't parboil it.
・You can substitute bone-in meat such as chicken wings for the chicken wings.
・If you simmer over high heat, the soup will break down or the soup will become cloudy, so be sure to keep the temperature at just below boiling point and simmer over low heat.
