Cut off the stems of the eggplants, cut them in half lengthwise, and then cut them diagonally into 5mm wide pieces.
Cut the peppers in half lengthwise, remove the seeds, and cut into 5mm pieces.
Cut the fried tofu in half lengthwise and then into 5mm wide pieces. -

Point
・When frying the ingredients in step 2, stir-fry until you can pierce the eggplant without using force with chopsticks.
・We use 3x concentrated mentsuyu.
・Since boiled soba is used, the boiling time is short.
・If you don't have green onions, you don't need to use them.
・When serving, it is best to place the ingredients on top of the soba noodles.
