- Udon : 4 servings
- Attached miso sauce : 4人前
- 大根 : 1 and about 1/4
- 椎茸 : 2 pieces

- さつまいも : 適量
- 牛蒡 : 適量

- 鶏もも肉 : 2 sheets
- 水 : 2.5L

Cut the burdock root diagonally.
Peel the radish and cut the skin into appropriate size pieces.
Cut the radish into ginkgo pieces.
Cut the carrot into ginkgo pieces.
Cut the stems off the shiitake mushrooms and cut the caps into appropriate sizes.
Cut the sweet potato into ginkgo pieces.
Cut the green onion into rounds.
Cut the chicken thighs into bite-sized pieces. -

Add all ingredients except water, sake, and green onions to a pot.
Bring to the boil and cook the vegetables.
Remove the lye.
Add udon noodles and bring to a boil.
Add the included miso sauce and bring to a simmer.
Taste, add miso and mirin, and simmer.
Point
・We use udon noodles like hoto.
-Vegetables can be substituted with other vegetables.
・Use sweet potatoes with the skin on.
・Simmer the udon until it reaches your desired firmness.
・Adjust the amounts of miso and mirin after tasting.
