- ちくわ : 3本
- 明太子 : 1本
- ネギ : 少々
- 油 : 大さじ1
- 中華だし : 小さじ8/10
- ブラックペッパー : 適量
- 醤油 : 小さじ1/2

Crack the eggs into a container.
Cut the chikuwa in half lengthwise and then cut it into small pieces crosswise.
Cut the mentaiko to bite size pieces using kitchen scissors.
Roughly chop the green onions. -

Place a frying pan over high heat.
Add oil to a frying pan, beat the eggs, and mix with chopsticks.
Add the rice and mix with a ladle or spatula.
Add chikuwa and mentaiko and stir fry.
Add Chinese soup stock, black pepper, and soy sauce and stir fry. -

Garnish with pickled takana (not included in the recipe) and serve.
Point
・Instant rice is used.
- Roughly chopping the green onions will give them texture.
・When beating the eggs, mix so that the whites and yolks separate, but do not mix too much.
・Amount per person.
・Mentaiko can be substituted with cod roe.
- Takana pickles (not included in the recipe) are added at the end, but you can mix it in to your liking.
