Ingredients

  • 玉ねぎ : 2個(500g)
  • ニラ : 30g(4~5本)
  • 生姜 : 5g
  • garlic : 1片
  • 白胡麻 : 大さじ1/2
  • 唐辛子 : 1本
  • (A)水 : 100ml
  • (A)酒 : 大さじ2
  • (A)みりん : 大さじ1
  • (A)砂糖 : 大さじ1
  • (B)醤油 : 50ml
  • (B)酢 : 大さじ1
  • (B)味噌 : 大さじ1/2
  • ごま油 : 大さじ1

Procedure

  1. 1) 材料を切る 02:15

    Peel the onion, cut off the stem, cut it in half and then cut it into quarters.
    Cut off the root end of the chives and cut them into pieces about 1cm wide.

  2. 2) 玉ねぎを焼く 03:28

    フライパンにごま油を入れ、中火で温める。
    1の玉ねぎを並べ入れて、弱火で焼く。

  3. 3) ニラだれの下準備をする 04:09

    Halve the chilli pepper using kitchen scissors, remove the seeds and slice into rings.
    Ginger is peeled.
    Cut the garlic in half lengthwise and remove the sprouts.

  4. 4) 玉ねぎに焼き色を付ける 04:50

    2の玉ねぎに焼き色が付いたら、裏返す。
    両面に焼き色が付いたら、火を止めて保存容器に取り出す。

  5. 5) ニラだれを作る 06:09

    玉ねぎを取り出した4のフライパンに(A)を入れて、中火にかける。
    ヘラで混ぜながら沸騰させて、1分ほど煮詰める。
    火を止めて(B)を加え、よく混ぜる。
    フライパンの中に、3の生姜とにんにくをすりおろし混ぜる。
    輪切りにした唐辛子と白ごま、1のニラを加えよく混ぜ合わせる。

  6. 6) 仕上げる 07:46

    4の保存容器の中に、5を投入し粗熱を取る。
    冷蔵庫で30分ほど漬け込んだら、完成。

Point

*Marinating time is not included in the total time.
・You can use ginger and garlic in tubes, but we recommend using fresh ginger and garlic as they have a better aroma.
If the onions don't stick together, use a toothpick to hold them together.
While the onions are roasting in step 2, carry out step 3.
・New onions are used in the video, but if you are using regular onions, we recommend adding water while frying to steam them.
If you are steaming, make sure to remove the moisture at the end.
Once you have transferred the onions to a storage container, remove the toothpicks.
