Preparing the Cucumbers

Peel the cucumber lengthwise in 3 places using a peeler.
Cut into thin diagonal slices, transfer to a plastic bag, add sea salt, rub lightly and leave for 30 minutes. -

オクラはネットの上から塩(分量外)を振り、よく揉む。
ヘタなどの硬い部分を取り除く。
鍋に沸騰したお湯(分量外)で1分茹で、流水で冷やす。

ボウルに(A)を入れて、ゴムベラでよく混ぜる。

きゅうりの水分をよく絞り、加えて混ぜたら完成。
Point
-If cucumbers are wilted, it is a good idea to peel them.
- When you leave the cucumbers for 30 minutes after salting them, placing a weight on them will shorten the time.
-It has a light flavor, so you can add miso to taste.
・You can omit the chili oil if you like.
- If you squeeze the water out of the cucumbers thoroughly, the flavor will not become too diluted.
*The 30 minutes it takes to let the cucumbers sit after salting them is not included in the time required.
