Ingredients
- Fresh ginger : 250g

Sterilize storage jars by boiling

Place a clean kitchen towel in a large pot.
Remove the rubber band from the storage jar and place both the rubber band and the storage jar in the pot.
Add plenty of water (not included in the recipe) and place on medium heat.
Once boiling, reduce heat to low and simmer for 10 minutes.
Place the rubber bands and storage jars on a wire rack to dry. -

Scrape off the skin with a spoon, rinse lightly with water and then pat dry with kitchen paper.
Cut into 4-5cm pieces, then slice thinly along the grain.

Cover with plastic wrap and let sit in a cool place for 30 minutes to an hour. -

Point
・We use fresh ginger, which has a less spicy taste.
- You can use beet sugar or white sugar instead of cane sugar if you prefer, but we recommend using cane sugar, which gives it a rich flavor.
・Lemon juice can be substituted with 1 tablespoon of commercially available lemon juice.
If you don't have a clean cloth, you can use several layers of kitchen paper.
- In step 1, if the storage jar is outside the hot water, turn it upside down halfway through.
You can use a slicer to slice the ginger thinly.
- If you have time, sprinkle on some cane sugar and then leave for an hour. This will release moisture and give the fish a stronger aroma, making it more delicious.
*The time it takes to coat with cane sugar to remove moisture is not included in the cooking time.
