Ingredients
- Minced pork : Approx. 200g
- ニラ : 1/2束
- 長ネギ : 1本
- かいわれ大根 : 適量
- 生姜 : 1かけ
- Doubanjiang : 1 tablespoon
- Sweet bean sauce : 1 tablespoon
- (A) Soy sauce : 1 teaspoon
- (A) Sugar : 1 teaspoon
- (A) Chicken stock powder : a little
- (A) Shaoxing wine : a little
- (B) Noodle soup : 大さじ2
- (B) Oyster sauce : 大さじ1
- (B) Soy milk : 200ml
- (B) White sesame paste : 大さじ1
- (B) Chicken stock powder : 少々
- ごま油 : 小さじ1/2
- ラー油 : 適量
- 黒胡椒 : 適量

Procedure

Do the preparations

Remove the roots of the leeks, chop them finely and place in a bowl.
Finely chop the green parts of the spring onions and place in a bowl.
Cut the white part of the green onion into shredded green onions.
Peel the ginger and grate it. -

Add oil (not included in the recipe) to a frying pan and heat over high heat.
Add the ground pork and stir fry, breaking it up with a spatula.
Add the green parts of the scallions and chives and stir fry over medium heat.
Transfer to a bowl and allow to cool.
Once cooled, cover with plastic wrap and chill in the refrigerator.
Add ginger, chili bean paste, and sweet bean paste and stir fry.
Add (A) and stir fry. -

Add sesame oil and mix.
Place in the refrigerator to chill. -

鍋でお湯(分量外)を沸かしてそうめんを茹でる。
ザルにあけて氷水(分量外)で冷ます。
水気を切る。 -

盛り付ける

器にスープを入れる。
そうめんを入れて絡ませる。
氷(分量外)を入れる。
肉味噌を乗せる。
長ネギの白い部分とかいわれ大根を乗せる。
ラー油と黒胡椒をかけて完成。
Point
・Serves 2.
・The noodle soup used is three times concentrated.
- You can also finely chop the core of the green onion and add it when making meat miso.
-You can also top it with boiled bok choy or mizuna if you like.
If you don't like soy milk, you can substitute it with milk and water.
