- サバの水煮缶 : 1缶
- トマト : 1個
- (A) Grated ginger : 1 teaspoon
- (A) Water : 400ml
- (A) Soy sauce : 大さじ4
- (A) Mirin : 大さじ4
- (A) Powdered artificial sweeteners : 大さじ1
- (A) Kombucha : 小さじ1/2
- (A) Salt : ふたつまみ
- (B) Japanese-style granulated soup stock : 小さじ1
- (B) Fish meal : 大さじ1
- 蕎麦 : 1人分
- みょうが : 1個
- 刻みネギ : 適量

Procedure

Prepare the ingredients

Remove the stems from the tomatoes and cut into 1cm cubes.
Shred the myoga ginger and soak in water (not included in the recipe) to remove the bitterness. -

蕎麦つゆを作る

鍋に(A)、トマト、サバの水煮缶を加えサバを軽くほぐす。
中火にかけ、アクを取りながら加熱する。
沸騰したら火を消したら(B)を加えて混ぜ、馴染ませる。
粗熱を取り、冷蔵庫でよく冷やす。 -

蕎麦を茹でる

Bring water (not included in the recipe) to a boil in a pot, add the soba noodles and boil for the specified time.
Drain the water in a colander, then soak in water (not included in the recipe) and rub to remove the slime.
Immerse in ice water (not included in the recipe) to chill thoroughly, then drain well. -

みょうが、刻みネギをトッピングしたら完成。
Point
The soup portion listed is for two people.
・Ginger can be substituted with 3cm of ginger from a tube.
- Use 70 to 90g of dried buckwheat noodles and 100 to 120g of fresh buckwheat noodles.
- Using 80-100% buckwheat flour is good for dieting because it keeps blood sugar levels from rising after a meal.
- Powdered artificial sweeteners can be substituted for sugar.
-Tomatoes are effective for dieting. -Use canned boiled mackerel, including the juice.
・(B) can be added after turning off the heat to enhance the flavor and umami taste.
*The time it takes for the soba soup to cool and then chill in the refrigerator is not included in the required time.
・Cooling soba noodles in ice water will firm them up and give them a chewy texture.
