- Cake flour : 100g
- Strong powder : 150g
- sugar : 30g
- salt : 3g
- Dry yeast : 3g
- Baking powder : 3g
- 1 whole egg + milk : 145g
- Unsalted butter : 25g
Prepare the dough material
Put flour, cake flour, sugar, salt, dry yeast and baking powder in a bowl. Put 1 whole egg and milk in another bowl and weigh to a total of 145g.
Mix and knead the dough
Mix ingredients from 1 and mix until a lump. Transfer to a table and knead until the dough is smooth, add unsalted butter that has been returned to room temperature, and knead the dough further.
Ferment and mold
Return to bowl and ferment for 50 minutes to 1 hour until doubled. Degas, divide into 8 equal parts, re-roll and let the dough rest for 15-20 minutes. Shape it into a bagel, place it on a cut oven sheet one by one, and ferment it for about 30 minutes until it doubles in size.
Fry both sides in oil warmed to 170 degrees for 2 minutes each.
Add granulated sugar or chocolate to your liking.
