Ingredients
- Biscuit : 100g
- Drawn butter : 45g
- Cream cheese : 280g
- Cornstarch : 12g
- Granulated sugar : 75g
- egg : 1 piece
- egg yolk : 1 piece
- sour cream : 140g
- Fresh cream : 110g
- lemon juice : 10ml
- Vanilla extract : 1 tsp
- Strawberry : 120g
- (A) Lemon juice : 5ml
- (A) Granulated sugar : 30g

Procedure

Make a biscuit tart stand

Put the biscuits in a bag, beat them with a rolling pin from the top of the bag, and crush them into small pieces.
Add melted butter and knead to blend.
Spread it flat while pressing it on the bottom of the mold with the baking sheet set. -

Put cream cheese that has been returned to room temperature in a bowl and knead until smooth.
Add cornstarch and granulated sugar and mix.
Add eggs and yolks and mix further.
Add sour cream and fresh cream and mix with a whisk.
Add lemon juice and vanilla extract and mix further. -

Bake in a water bath in the oven

Pour the dough into the mold 1 and level the surface, then lightly drop it on the table.
Pour hot water on the top plate and bake in a 160 degree oven for 65 minutes.
Open the oven door a little and leave it in the oven for about 60 minutes to remove the rough heat.
Cool the whole mold in the refrigerator for about 5 hours. -

Make strawberry sauce

Remove the calyx of the washed strawberries, slice and put in a pan.
Add (A) and heat on low heat for 12 minutes.

Serve on a plate and sprinkle with strawberry sauce.
