  • 牛バラ肉 : 250g
  • 焼き豆腐 : 1丁

  • 椎茸 : 3個

  • (B)料理酒 : 大さじ1
  • (B)砂糖 : 小さじ1

Procedure

  1. 1) Prepare beef 01:20

    Cut the beef into pieces that are easy to eat.
    Put beef in a bowl, add (B) and knead.

  2. 2) Cut long onions and shiitake mushrooms 02:05

    Cut the green onions diagonally.
    Cut off the shiitake mushroom shaft and cut it in half.

    豆腐を、食べやすい大きさに切る。
    キッチンペーパーで、5分程水切りをする。

    (A)を、混ぜ合わせる。

  5. 5) 白滝を下茹でする 03:19

    お湯を沸騰させ、白滝を入れる。
    再度沸騰させて1分程茹で、取り出す。

  6. 6) 長ねぎを焼く 03:48

    フライパンにサラダ油をひき、長ねぎを並べる。
    中火で、両面に焼き色が付くまで焼く。

  7. 7) 牛肉を焼く 04:21

    煮汁を加えて沸騰させ、牛肉を加える。
    8割程火が通ったら、一度取り出す。

  8. 8) 具材を煮込む 05:13

    アクを取って弱火にし、椎茸、白滝、豆腐を加える。
    落し蓋をして5分程煮込み、具材を裏返す。
    再度落し蓋をし、5分程煮込む。

  9. 9) 仕上げる 06:18

    落し蓋を取って牛肉を戻し、火を通したら完成。

Point

・ For beef, you can use any part of your choice.
・ The tofu may be cotton tofu.
・ You may add your favorite ingredients.
・ Beef is soaked in cooking sake and sugar before boiling.
・ Beef should be taken out once when it is cooked for about 80%.
・ If you have time, cool the heat once and heat it again to get more flavor.
