- 刻み昆布 : 適量
- (A)塩 : 40g
- (A)砂糖 : 300g
- (A)酢 : 200g
- (A)輪切り唐辛子 : 適量
- ゆず : 1個

刻み昆布を水で戻す。大根を入れたボウルに(A)の具材を入れる。細切りにしたゆずの皮と、戻した昆布を加え、全体を混ぜる。ラップで落し蓋をし、1日漬ける。
